Steak and Fresh Scallops with Chardonnay Scallop Sauce a while ago

Description:
Okay, tonight I had steak and some scallops and didn't want to go out and grill. So I threw together this and it turned out quite well. In general, I don't cook with recipes, so you'll have to follow along with the pictures.

Step 1



Season steak with spanish sea salt w. two peppers (a slightly hot spicy salt you can pick up at whole foods) and a little bit of olive oil.

Season and let sit for 20 minutes

Heat up the pan first

Then pan sear the steak. I pan seared it and (forgot to photograph) let sit in the warming drawer while I was making the scallops. The warming drawer sits at about 200 degrees. So I put it in there while the inside of the steak was still quite rare.

Here are the scallops, purchased at Lytle's Seafoods just outside of Ocean Shores. They have very fresh, very clean (very clean) seafood. Always small selection of just what should be sold on that day.

Step 5



Pan fry those buggers by heating the pan, then adding butter, then frying the scallops. I cooked them to 3/4 done, turned the warming drawer down, and put them in with the steak.

Step 6



I then deglazed the pan with Chardonnay. There was enough butter in the pan and plenty of delicious carmelization from the scallops.

Step 7



Here we put it all together. And voila! You have steak with pan seared scallops and Chardonnay Scallop Sauce.
